Our partners at Underground Butcher are popping up and they’re bringing dough.
Madison, Wisconsin may seem an unlikely locale for boiled bread notoriety, but we promise Underground Butcher makes bagels that give their New York counterpoints a run for their money. They’re setting up shop with us and hand-rolling Everything, Salt, Sesame, and Plain bagels. Smoked and cured Great Lakes fish (think smoked whitefish spread, cured lake trout and herring roe), plus pickles galore and housemade cream cheese will be around to adorn these chewy rounds. We’ll have the breakfast wine flowing, along with coffee for those who prefer their bagels sans-buzz.
